Delicious Banana Nut Bread Recipe

Have some dead bananas lying around? I know you all do. I’m not going to judge. It’s hard to eat all of them before they brown. Also Garrett likes bananas and so we do this quite a bit! Here’s a delicious & easy banana nut bread recipe. (Recipe Credit: Angie Dalton Schlothauer). Seriously it’s not hard – remember I’m a college kid I don’t cook.

First of all – preheat your oven to 325 degrees.

You’ll start making the batter by creaming 1/2 c. butter with 1 1/2 c. of sugar.

It should look kind of crumbly like this!

Next you’ll need to add 2 eggs and beat those in.

You’ll need to add 3 of those nasty brown bananas – mashed of course! Mix it very well.

You’ll also need to add your 1/2 c. chopped pecans and 4 tbsp of buttermilk.

I LOVE pecans! New Mexico produces quite a few so they’re pretty accessible (especially down south!)

The next thing you’ll need to do is measure out 1 tsp of vanilla and mix that delicousness in.

Finally you’ll sift the 2 c. of flour, 1 tsp. baking soda and a pinch of salt together and beat until well mixed.

And also can we dedicate just a minute to how adorable the miniature loaf pans are? I mean come on, how can you not;)? Then after that you’ll oil the inside of the pans lightly and dust with flour.

Then you’ll just have to divide it equally into three (adorable) mini-loaf pans.

Next you just bake these babies for 50 – 60 minutes (or until they’re brown) and enjoy the wonderfulness:)

But before you do that you should actually let them cool on a rack out of the mini loaf pans for like 30-45 minutes.

Delicious Banana Nut Bread Recipe

Ingredients

1/2 c. butter or shortening

2 eggs

3 bananas

2 c. four

1 tsp. baking soda

1 1/2 c. sugar

pinch of salt

4 tbsp buttermilk

1 tsp. vanilla

1/2 c. pecans

Also – you’ll need mini loaf pans!

Steps

  1. Cream butter & sugar.
  2. Add eggs.
  3. Add bananas which have been mashed.
  4. Add chopped nuts, buttermilk & vanilla.
  5. Sift flour, baking soda, & salt together.
  6. Gradually mix flour mixture into other ingredients. Beat well.
  7. Pour into greased & floured mni load pans.
  8. Bake at 325 degrees for 50-60 minutes or until browned and done.
  9. Let cool on a rack.
  10. Enjoy!!!

P.S. If you’d like to make icing to go with these mix 1/8 c. butter, 1 c. powdered sugar, 1 banana & 1 c. pecans. Mash banana & mix with pecans. Add to butter & sugar mixture, spread over cake.

    I actually needed a banana bread recipe because I have some of those brown bananas sitting around…you swooped in to save the day! Nice.
