Easy One Pot Cheesy Potato Soup Recipe

Even though the holidays have come and gone it is still very much winter! The past week has been a not so quiet reminder of that fact. In Las Cruces not only did have we had incredibly cold temperatures – we also had polar vortex wind. Really, this isn’t surprising. It’s always a little windy and this is just a small taste of what spring has in store. But when the wind shirks past your fleece coat down into your core you need a little something to warm up your soul! Now don’t get me wrong I LOVE my mom’s famous green chile stew but my husbands been begging me to make this since October. You could say he’s a little excited about this easy one pot cheesy potato soup recipe – and I don’t blame him.

Easy One Pot Cheesy Potato Soup Recipe

You’re going to have to start by washing and peeling the potatoes. I like to use my little scrub brush to remove any dirt (sans soap of course).

Once you’re done with this you’ll need to dice them into cubes that are about one inch in size. It’s really important to make sure they are of a consistent size so they cook the same. Also, so they don’t turn into mush or not cook enough.

Once they’re all diced and ready to go cover them with water in a large stockpot. Boil them until they begin to fall apart. This took about fifteen(ish) minutes for mine to start doing this.

Once you’re here make sure not to drain the water. You’re just going to bring it to a light simmer enough to melt the grated Velveeta cheese and sour cream in.

Add your chicken bouillon cubes, and stick of butter at this point as well.

 

Then you’re finished!

Don’t forget to to crumble bacon and your chopped green onions over each serving. Because hello – bacon!

This recipe may not be the most New Year’s resolution friendly. But it’s pretty economical and extra delicious when the wind gales outside.

I like to chase mine with mini oyster crackers but saltines do the trick too!

Easy One Pot Cheesy Potato Soup Recipe

Ingredients

  • 6-8 potatoes
  • 8 chopped green onions
  • 2 chicken bullion cubes
  • 8 slices of bacon, fried & crumbled
  • 1 stick butter
  • 1/2 cup grated Velveeta cheese
  • 1 (8oz) cup of sour cream
  • salt & pepper

Instructions

  1. Wash, peel & dice potatoes into 1 inch cubes. Cover with water and boil them until they begin to fall apart.
  2. Leave the water in the pot and add all of your remaining ingredients (except for the fried crumbled bacon).
  3. Bring your soup to a mild simmer – enough to melt your cheese and sour cream.
  4. Enjoy with crumbled bacon on top!
