3 Ingredient (Microwaveable) Queso

So a few days ago I shared a recipe for these easy and delicious Two-Step Restaurant Style Tortilla Chips, but what are chips without something to dip them in? That’s right – not near as good as they could be. One of my fiance’s favorite thing to eat them with is queso, and who can blame him, right? Queso is good year round but in my opinion it’s even better when it’s cold outside. If chile and cheese can’t warm your soul- then I’m pretty sure that you’re not a human being. That’s why I’m so excited to share this 3 Ingredient (Microwaveable) Queso recipe with you!

Can you tell that I’m into doing the least work/making the least mess on the stovetop as possible yet? There are some things that would be sacreligious to cook in a microwave but personally I don’t think queso falls into that category. You literally dirty one microwave friendly dish, a knife, and cutting board. That is all you have to wash and if you’re like me and you’ve recently been cooking copious amounts of food (lets say for a food blog hint hint) the LESS dishes the BETTER. We don’t have a dishwasher. Scratch that – I’m the dishwasher.

Not only is this a really easy recipe to make because of the cleanup, it’s quick. It’s a dump and go type of thing. Literally takes less than ten minutes to make and your company will be raving about it for quite a while. The other cool thing is that because you select the amount and level of hotness of the green chile you incorporate that this can appeal to the most seasoned chile eaters and little jeuritas like me.

You start out by cutting off 8oz of Velveeta cheese.

You’ll want to chunk this up into smaller pieces so they are easier to melt and then place these in your microwave safe dish.

Next you pour the evaporated milk in.

You will start by microwaving this mixture a minute or so.

When you remove it from the microwave you’ll then use a spatula to stir the mixture and introduce chopped green chiles.

Continue to cook it in the microwave until everything is smooth after stirring. There you go, you’re ready to wow your guests!

3 Ingredient (Microwaveable) Queso

Ingredients

  • 8oz Velveeta Cheese
  • ¾ Can of Evaporated Milk
  • 1 Small Container of Chopped Roasted Green Chile

Instructions

  1. Cut up 8oz of Velveeta Cheese into small chunks and place them in your microwave friendly dish.
  2. Pour ¾ Can of Evaporated Milk into microwave friendly dish.
  3. Microwave for a minute to soften contents. Mix and introduce can of chopped roasted green chile.
  4. Continue to microwave in minute bouts and stirring until mixture is smooth.
  5. Enjoy!

I’m thinking this would be a great and EASY dish to serve for a superbowl party. How about you?
