3 Step Chicken Rice Casserole Recipe

Even though it’s beginning to warm up in Las Cruces, we have still had a few cold, cloudy and polar-vortex wind whipped days this spring. This is nothing compared to the snow that parts of the northern tips of the country have experienced – over spring break no less. This 3 Step Chicken Rice Casserole Recipe is a perfect fix! There were many a days as a child that we had this for dinner, and now that I’m an adult I completely understand why. While this 3 Step Chicken Rice Casserole Recipe may not be the most glamorous, it still works and always will.

I mean seriously, have you ever tried to photograph a chicken rice casserole recipe? Definitely not easy. It may not be the prettiest dish out there, but I’m in love with it for three reasons.

  1. It’s incredibly easy (literally 3 steps). There’s literally no way to ruin this recipe. Even if you’re a beginner and it takes maybe ten minutes to put together.
  2. Chicken rice casserole is a pretty frugal recipe (like $4 in chicken breasts, a little rice and a can of mushroom soup frugal).
  3. It’s also pretty healthy, and full of protein!

Also my husband has been begging for chicken and rice for a number of weeks as he continues training for the United States Marine Corps. So I finally weakened the other day and made it for him. He’s only slightly less in love with it than this 10 minute pulled pork recipe.

3 Step Chicken Rice Casserole Recipe

Begin by mixing your cream of mushroom soup, water, spices and rice in a baking dish.

Once you’re done with this just place your chicken in the rice mixture and top the chicken with your spices one more time.

Pop that casserole in the oven, cover it, and bake it at 375 degrees Fahrenheit until it’s done. This usually takes 45 minutes but the size of your chicken breasts will have an impact upon this. Make sure to check their internal temperature (they should be a minimum of 165 degrees) to guarantee they’re done. Then Wa-lah, your dinner is ready!

It’s a great recipe to throw together mid-week with ingredients you probably have in your home at the last minute.

3 Step Chicken Rice Casserole Recipe

Ingredients

  • 10 3/4 oz can of cream of mushroom soup
  • 1 1/3 c. water
  • 3/4 c. uncooked white rice
  • 1/4 tsp paprika
  • 4 skinless, boneless chicken breast halves
  • 1/4 tsp pepper
  • salt to taste

Instructions

  1. Mix soup, paprika, rice, pepper and water in a shallow pan.
  2. Place chicken in rice mixture and season with paprika and pepper.
  3. Cover your chicken breast halves and rice mixture and cook for 45 minutes or until done at 375 degrees Fahrenheit.
  4. Salt rice to taste & enjoy!
