Delectable Classic Bran Muffins

Hey guess what, it’s actually fall now. Like for real. As in not only has the calendar accepted that the season is here. But it was actually noticeable this morning how cool it was before 9 AM. For a place like New Mexico that you can hardly stand gripping your steering wheel at about 2 PM, this change in temperature is rather noteworthy. It’s always gotten cool the week of the Southern New Mexico State Fair, I know because I showed dairy heifers. Essentially this means that you spend a minimum of twelve hours each day at the fair grounds caring for your animals. In all honesty, it’s probably more than that, especially if you just camp out each night. Either way it’s a LOT of fun. The smell of wood shavings and crisp mornings always signaled summer’s conclusion. So now, we’re going to celebrate with more fall baking  with these FABULOUS delectable classic bran muffins!

I’ve been ready since last week with my gorgeous white mums adorning the porch and Copenhagen shade of NYX lip butter in tow. My best friend and I already made caramel apples and are spent twenty minutes at Walmart planning how to decorate the porch for the night of Halloween. You know why? Because I’ve never made time for fall – and it only lasts like three whole months. I’m not spending my 22nd year forgetting to pay it homage. And what better way to do this than by sharing this classic bran muffin recipe?

You’ll start by preheating the oven. Grease your muffin tins.

Combine the cereal, milk, oil and egg in a bowl, mix it well. Let it stand for ten minutes.

After this, stir to break the cereal up. Next you’ll sift the flour, sugar, baking powder and salt  in a separate bowl.

Then combine the cereal and flour mixture together until mixed.

Next divide this batter amongst the 12 cups and bake for 20 minutes, or until browned.

Classic Bran Muffins

Ingredients

2 cups Bran Flakes

1 cup milk

1/4 cup of vegetable oil

1 egg

1 cup flour

1/3 cup sugar

1/4 tsp salt

1 Tablespoon baking powder

Instructions

  1. Preheat oven to 400 degrees Fahrenheit. Grease or paper-line the muffin tins/cups.
  2. Combine cereal, milk, oil and egg in a bowl. Mix well
  3. After letting the cereal mixture stand for 10 minutes stir to break up the cereal further.
  4. Sift the flour, sugar, baking powder and salt in a separate bowl.
  5. Combine the cereal mixture with the flour mixture until well mixed.
  6. Divide the batter into 12 muffin tins evenly and bake for twenty minutes or until browned.
